FRESH TRUFFLES

We are able to offer a wide variety of fresh truffles. 

Each origin is strictly separated, clearly identified, and never mixed, ensuring full transparency and respect for each product’s aromatic profile. 

• White truffle – Alba truffle (Tuber magnatum) from Italy;

• Black truffle – Périgord truffle (Tuber melanosporum) from France, Spain and Italy; 

• Summer truffle – Saint-Jean truffle (Tuber aestivum) from France and EU;

• Musky truffle – (Tuber brumale) from France and EU;

• Australian black truffle (Tuber melanosporum);

• Burgundy truffle (Tuber uncinatum) from France and EU;

QUALITY GRADING – FRESH TRUFFLES

Extra Brushed

Nearly perfect shape, whole truffle, 20 g and above.*

Very dark flesh for Tuber melanosporum or beige-marbled flesh for Tuber aestivum, with pronounced aroma and flavor.
Slight shape imperfections accepted depending on the season. 

Extra Small Brushed

Nearly perfect shape, whole truffle, 10–20 g.*

Very dark flesh for Tuber melanosporum or beige-marbled flesh for Tuber aestivum, with pronounced aroma and flavor.
Slight shape imperfections accepted depending on the season. 

First Choice Brushed

Whole truffle, 20 g and above.*

Very dark flesh for Tuber melanosporum or beige-marbled flesh for Tuber aestivum, with pronounced aroma and flavor.
Appearance imperfections and irregular shapes are accepted. 

Large Pieces

Individual pieces over 25 g.*
Very dark flesh for Tuber melanosporum or beige-marbled flesh for Tuber aestivum, with pronounced aroma and flavor. 

Small Pieces

Individual pieces of 10–20 g.*
Dark-colored (ripe) flesh interspersed with fine white veins. 

Truffle Peelings
Strips of truffle, 1–3 cm, obtained from trimming or peeling the truffle.* 

Truffle Fragments

High-quality truffle crumbs.*

Typically weighing 1–3 g.
Dark flesh for Tuber melanosporum or beige-marbled flesh for Tuber aestivum.
